When I eat bacon and sausage, I make sure it's nitrite and gluten free, yes, and avoid meat that has been overly processed or with any added sugar or maple. Trader Joe's is great for bacon and sausage that has not been severly processed, and I am also lucky enough to live in an area where it's easy to find a local farmer to buy grass fed/free range meat from... Good luck!!

I have started Paleo and feel great so far, but it gets boring. Thank you so much for the ideas on the site. With bacon and sausage, I have been avoiding because I am being strict. If it is natural and gluten and nitrate free is it ok? Some ingredients I saw were cane sugar and maple ?

Silly. Don't worry, I didn't know you could microwave bacon until I saw my roommate do it recently. Now BLT's? I might make that for dinner tonight. I haven't had one in YEARS! That sounds pretty good.
