The Perfect Poached Egg

Sick of scrambled eggs – try poached!  I always assumed that poached eggs were for folks who had more culinary expertise and patience then little ol’ me.  Although I love to cook - I find more frustration then satisfaction when trying to make ANYTHING that is as lovely and delicate as a poached egg.  BUT – thanks to my dear friend Laura H., my mind has been forever changed about my prior notion of the impossible feat of producing the perfect poached egg.  I also must express my gratification to Laura H., who not only has taught me how to make the perfect poached egg but also adds love and light to my life and to the lives of my husband and children – thank you sweet Laura we love you!

Perfect Poached Egg

Bring a SMALL pot of water to a rapid boil and pour in a drop of apple cider vinegar.  Crack one egg, being careful to keep the yolk in tact, and slip the egg into the boiling water.  With a spatula, keep the water moving by gently sweeping the water above the egg.  After a minute or two use the spatula to lift the egg from the water to check to see if it’s done.  The perfect poached egg will have a cooked white and a bright yellow yolk.  Serve immediately!  My kiddos LOVE these eggs served in a bowl with a sprinkle of sea salt and some cracked black pepper.  My husband and I enjoyed poached eggs the other morning with fresh pork sausage patties and avocado slices…

    I just recently stumbled upon your blog and love it! I too have lost a significant amount of weight while doing Crossfit. I found my local Crossfit gym back in May 2009.
    I have been following the Zone with great results (a couple years), but now trying to incorporate a more Paleo recipes etc.
    Was there a particular book or website that helped you most? I find your meals so creative etc,mine are pretty bland and boring. Sure makes it hard to stick to. I sure would love some help.

    • My brother raised a couple of pigs last year so I was lucky to have had a hook up for some killer sausage and pork chops. I’m so glad my brother likes to share!! : )

    here’s my 2c for poaching eggs:
    1. have the egg in a bowl, and just slip it off the bowl into the water.
    less ‘drop splash and break’ factor.
    2. more annoying, but saw it on tv
    line a small cup with clingwrap coated with oil, drop egg in, tie the ends together, and poach the bag; no worries about it breaking apart at all
    but since we are all about saving time… :p

  4. Just found your blog and am reading through – great recipes! Glad I found you! I have always loved poached eggs, but never knew how to make them. I’m going to give this a try when I’m done with my hardcore Paleo Challenge (I have to hunt and forage my own food for three months, sigh).

I’m new to Paleo (by way of CrossFit) AND cooking for myself, so your site has been a wealth of knowledge– THANKS! For those of us who aren’t so lucky to have a pork sausage hook up, where would you suggest getting sausage? I do have a local TJ and Whole Foods…

  7. @Kaylee you can find good pork sausage at most grocery stores! I buy mine at the local Safeway here. Completely organic and DELICIOUS. (definitely a favorite of my kiddos!)

  8. I saw on the food channel to get the water spinning in a clockwise whirlpool fashion then gently crack the egg into the water. also.. Paleo Mom your a cutie! (with all do respect) :-)

    • Not at all Lara! There are several sausage options that are from quality meat sources with minimal ingredients and no grains! I am currently loving all the sausages from US Wellness Meats http://www.grasslandbeef.com/StoreFront.bok and we also buy Applegate Farms sausage, and my local butcher makes sausage without any fillers such as grains, and Trader Joe’s also carries sausages with minimal ingredients. : )
