Shrimp Flying Saucers…

Yes, name is a bit corny, but I swear the tomatoes in Northern California are so freaking huge right now they remind me of flying saucers after I slice them!!  So, hence the name.  I made this for lunch the other day and Rowan (the 2 year old) ate about half of it, no joke.  Actually, as I type this, I wish I had some more – it was so good!!

Shrimp Flying Saucers

2 Heirloom of Beefsteak tomatoes – sliced

1 lb cooked medium sized shrimp tails removed

2 cups chopped purple cabbage

½ a small red onion finely diced

1 small cucumber peeled, sliced, and diced

4 Omega 3 enriched hard-boiled eggs peeled and chopped

1 tbsp dried dill

1 tsp garlic powder

Pinch of cayenne pepper

3 tbsp olive oil

2 tbsp fresh squeezed lemon juice

1 tbsp spicy brown mustard

Sea salt and fresh cracked black pepper to taste

Handful of sliced almonds

Cut the cooked and cooled shrimp into halves or thirds, depending on the size of your shrimp.  In a large mixing bowl, toss in the cabbage, cucumbers, onion, shrimp, and egg.  Add the dill, garlic, mustard, olive oil, lemon juice, mustard, salt, and pepper and mix well.  Serve huge scoops on top of the thick sliced tomatoes.  Top with a sprinkle of sliced almonds.

  2. I love your site! My kids are Paleo-ish…we are working on completely Paleo for them. I am Paleo myself. The children might have a sandwich once every two weeks for lunch but I am really getting away from that altogether. They actually love it when I pack them grilled chicken cooked with some veggies, a piece of fresh fruit, nuts. My youngest isn’t a nut fan so being still pretty young I do give them some greek yogurt or cottage cheese.

    It is a process. I have been into health and nutrition for many years on my own and have just started a program to become a certified health coach. And CrossFit saved my life! So thanks again for your site…its great seeing other moms out there on the same mission!

  3. I made this the other day as my “first” paleo dinner and it was AMAZING! I added a few bits of cut up avocado to it too because well, I just love avocados. I’ve been looking for ways to lose my baby weight without starving (which has been difficult because it seems that breastfeeding makes you have the munchies ALL DAY!) and want to give this a try. I’m slowly easing myself into Paleo eating by substituting one meal a day, we’ll see how it goes! Thanks for the recipes and for making it sound/look easy!

  4. Just tried this last night, and OMG…so flavorful and yummy! I substituted baked salmon for the shrimp, and added a blob of organic mayo to give it a creamy texture (I think the mayo is still paleo, but I’m not positive). It was AWESOME!

  5. I need help! My family and I are ready to start a this new lifestyle. My 14 year old son is even on board. I have only one problem. My son is highly allergic to nuts. A lot of your recipes include nuts and the use of almond meal. I know that I can just prepare the meals without the whole nuts; but what about the almond meal, butter and milk? Is there a substitute for this? Thank you for your insight. :)
