Sausage N’ Cabbage “Noodles” with Fried Apples

There are endless possibilities when making paleo foods and the truth is, I enjoy how our food tastes now better than I ever did during our pre-paleo days.  Nothing is better than fresh veggies soaking up delicious spices and tender bites of meat.  Well; nothing food related that is…  Today’s lunch was pretty much mouth watering from beginning to end and I hope you all enjoy this meal as much as we did!

Sausage N’ Cabbage “Noodles”

1 lb mild Italian pork sausage or other ground meat of your choice

1 red onion, thinly sliced

½ head or 5 cups thinly sliced green cabbage

2 tablespoons grass fed butter (or ghee, or coconut oil)

½ teaspoon caraway seeds

½ teaspoon paprika

Fresh ground black pepper and sea salt to taste

In a large skillet brown the sausage.  Once the sausage is fully cooked, remove it from the pan and set aside.  Add the butter to the same pan with the sausage drippings and add the onions and cook for about 5 minutes or until the onions start to brown a bit.  Add the cabbage and cook for another 7-10 minutes or until the cabbage is soft and “noodle-y.” Add the sausage back to the pan, add the spices, mix well and serve! Serves 4.

Fried Apples

3-4 small organic apples, thinly sliced (about 3 cups)

2 tablespoons coconut oil

¼ cup raisins

½ tablespoon cinnamon

2 tablespoons canned full fat coconut milk

In a medium sized saute pan, heat the coconut oil over medium heat.  Add the apples and saute for about 5 minutes or until they start to soften.  Add the raisins and cook for 2-3 more minutes.  Add the cinnamon, mix well and add the coconut milk.  Stir the coconut milk in with the apples just until warm and serve.  Serves 4.

  1. I love following your recipes and then trying to recreate them with ingredients that I can eat….I can not have any nightshades, nuts or fruits. Can you try, on occasion, to make a few recipes with these limitations please??

    • I made this dish last night but substituted the ground pork with Isernio’s All Natural Hot Italian Chicken Sausage and it was delicious. I made the Fried Apples for desert and they were really good also. Next I will be making the Paleo Pancit. Thanks for the great recipes.

  2. I have a couple of questions and i’m hope it’s ok that i’m asking you this in your reply box. :/
    Well…. i’m 11 weeks pregnant and i’m thinking of starting Paleo but i have a couple of questions :
    1. In http://www.thepaleodiet.com/faqs/ Question 9, paragraph #6 It talks about pregnant women having trouble tolerating high protein levels. What does that mean to someone like me? Is that where portion sizes comes into play? which leads me to question #2….
    2. One of the huge attractions to the Paleo plan for me is the idea of “no portion control”…. so to speak, i realize with nuts and some carb veggies there is an exception. I love to eat! Does this apply only to people who are strictly following Paleo? I plan on following the plan as closely as is recommended but i’m allowing myself a few exceptions when the urge hits for yogurt or maybe a baked potato…
    I really hope this all makes sense. I’m tired of feeling bloated and yucky and if i can start now, i’m hoping it will be a lot easier to follow once the baby comes. A good friend of mine shared Paleo with me and loves it. I have done diets like Weight Watchers which has worked for me but once i got to my goal weight i had trouble feeling satisfied with the portion sizes i had to follow, i felt like i was constantly starving!

  3. Sounds great! I actually make a semi-similar breakfast dish. I take a 1lb of bacon, chop into 1/2″ pieces (or so) then saute it up till almost crispy. Then I add a 1/2 head of cabbage shredded and cook until tender. Then add in 12-18 eggs and cook thoroughly. It is delish! Now, I am cooking for 8 people so it may be more than you want. But it is great!

    I can’t wait to whip this up – maybe tomorrow :)

  6. Food does taste better going paleo. The pantry lists you have posted in the past are really helpful, since sometimes plans can go awry, there are plenty of ings. to throw a delicious paleo meal together, thus keeping everyone on track. Can’t wait to try this new recipe!

  9. Easy, fast, & yummy! I doubled the recipe using 1 lb lamb & 1lb grass-fed beef with Italian seasoning while browning, added minced garlic too (I add to most everything, I’m a garlic addict!). Followed the rest of the recipe as directed using grass-fed butter. Delicious!!! Thanks as always for awesome meal ideas.

    I have questions in regards to coconut oil use on the Paleo plan. According to the book, coconut oil is a “bad” oil since it’s saturated – I don’t agree with that though since I’ve done extensive research on coconut oil and found that it’s extremely good for you, especially since it’s an MCT and works like a carb in your system. Anyway, I noticed that you use it along with coconut flour and just wondered if it’s ok to use even though I still have 20 lbs to lose. Thanks so much for your help. I love your website and I’ve just printed out several recipes to try. I can’t wait to make your Chicken Salad!

My 1 year old son is my cooking “helper” and as he was standing on a chair at the counter, munching on the raw red onion slices and cabbage slices while I was preping food, it made me think of your little cooking assistant and sampler, Rowan =)

  22. Pretty good, but I’ll skip the caraway next time. Perhaps its because I went with ground chicken, but I just cannot get into that taste. Instead, I could see some crushed red pepper (or Sriracha “Rooster” sauce) and garlic doing alright in here.

  27. Funny story about the sausage and cabbage dish. The other week, we had a breakfast at my office. It included the usual culprits (donut holes, bagels, cookies, etc) so in order to hang out with everyone and not end up eating any of those items, I brought some sausage and cabbage noodles. I had no idea that I would be the talk of the room. Almost everyone wanted to know what I was eating! Several people said “Why didn’t you bring any for us?” And these are non-Paleo people! It gave me a great opportunity to talk about Paleo and visually show people the great foods I get to eat everyday.

    This recipe is one of my breakfast staples, and next time we have an office potluck, I know what I will be making!

  33. Oh wow that was DELICIOUS! I used pork and apple sausages (skinned) from the freezer instead of doing the apple side as I’ve already had a bit of fruit today (only a little bit of apple in them). It was fabulous, can’t wait to dig into the left overs at lunch tomorrow.

  34. Thank you for this fantastic recipe! I’ve adapted it into what I call “Paleo Hash”, which has become a staple in our house for a quick lunch or dinner. I add grated carrots, a handful of golden raisins, a dash of cumin, and top the whole thing with chopped cashews for a little extra crunch. Delicious!

  35. We don’t really do any eating lifestyle. I have a local csa and try to cook seasonally with as much local stuff as possible. I’ve never read of a paleo diet before but this was a great meal. I’ve got enough left to freeze for another night as well. Thanks for the good recipe!
