Our Food 10/28

Breakfast was leftover meatballs with a little bit of leftover scrambled eggs and ham that the boys made while I was working this morning. Usually when I come home, breakfast is gone and I have to make my own. : ) Lunch was a fast shrimp stir fry: frozen shrimp from TJ’s, broccolli, carrots, artichoke hearts, zuchini, olive oil, butter, garlic, sea salt, pepper, and dill. 10 min to prep and cook. Dinner in the crockpot – chicken thighs and legs, rub with cumin, garlic powder, little bit of cinnamon, sea salt, and cayenne. Mix in celery, carrot, onion blend, can of diced green chilles, two jars of green salsa from TJ’s, cook all day on low, serve as lettuce tacos. Today Rowan turned 2 and I baked a gluten free cake using the gluten free brownie mix – added some apple sauce to the mix to make it more like cake – again from good ol’ Trader Joe’s.

Our Food 10/26

Breakfast was scrambled eggs with a scoop of guacamole (the already prepared tub from TJ’s).  Lunch was chicken salad: diced chicken breast, chopped apple, chopped up broccoli slaw, chopped up green cabbage, slivered almonds, little mayo, olive oil, vinegar, and black pepper.  Dinner was meatballs from TJ’s.  They finally started carrying gluten free meatballs in the section where the fresh meat is.  There is some dairy in the meatballs, but for a quick dinner, it worked.  Put the meatballs in the crockpot with some frozen bell pepper and onion mix and a can of organic marinara.  Snack idea: roll turkey around whatever you have – pictured is a few options. Turkey with guacamole and pecans, or with cabbage and pickles, or with artichoke hearts.  Cherry tomatoes are also good.

Alexis’ Dream

strollathon2[1]I was lucky enough to be able to attend the Alexis’ Dream fundraising strollathon this past weekend and meet some of the families that will hopefully benefit from the funds raised at our recent Fight Gone Bad event.

I was deeply moved by the strength and courage that these loving families displayed and most of all the incredible hope to someday find a cure and prevention for Rett Syndrome. Angela Herrick made a moving speech and acknowledged our Cross Fit community for helping forge on with the fight to end Rett Syndrome. Life is precious and fragile and this event was a wonderful reminder that community, support, friendship, and love is what makes life worth living, and these families who have little girls with Rett Syndrome are living with hands full, and hearts overflowing with love and dedication. Best of luck to the Herrick family and all the families touched by Rett. Check out these photos of Angela’s family, as well as two other CrossFitters, Rachelle and Mike who came to support!
