Sometimes crazy summer days lead to late night hectic dinners and last night the sun was setting as we sat down to eat.  Although the food was delicious, the actual experience ended up being more of a fiasco then a relaxing evening together.  I suppose that’s what I get for trying to have meal time at bed time but despite the hiccups like Jaden dumping his entire plate onto his lap and Rowan suddenly deciding that he no longer likes chicken, or zucchini, or eggplant, or anything at all really, we all eventually filled our bellies and gratefully crawled into bed.

Everyday Paleo Thai “No Peanut” Sauce

Thanks to my adventurous mother, as far back as I can remember I have had a huge interest and affection for international cuisine with one of my favorites being Thai food.

I hope someday to travel to Thailand and immerse myself in the culture, eat the food, visit the beaches, and ride around in a Tuk Tuk.  Truthfully, I want to travel the entire world and explore exciting food destinations and I will admit that now and then I’ll close my eyes and imagine myself as the female equivalent to Anthony Bourdain, especially now that he has given up cigarettes!

Everyday Paleo Pancit

Pancit is a Filipino dish made with meat, noodles, and veggies and seasoned with soy sauce.  My husband’s grandfather on his mom’s side was born and raised in the Philippines and passed his cultural and traditions on to his family, especially through the food!  It’s been years since my husband has had homemade pancit and after talking about the dish yesterday we remembered how great my recent Sausage n’ Cabbage Noodle dish was and decided to try using the same method for pancit! I have been in need of fast recipes this week and here is one I made for lunch yesterday that was so tasty that it really felt like I put more effort into the dish than I actually did! Mexican Mole My Way

The word “mole” translated means a sauce or concoction.  Depending on the region, family tradition, or choice of ingredients, mole can be made a million different ways. When I think of mole I think of interesting ingredients that when blended together somehow turn into a beautiful marriage of flavors.  I also think of hours spent in the kitchen, a list of ingredients longer than my arm, and I start to feel afraid as I realize that I could never do true justice to the amazing traditional moles I have been honored to eat over the years.
