Creamy Pumpkin Curry

This recipe was inspired by a reader who emailed me a recipe that he created for a seafood curry that was served over roasted pumpkin.  Of course I can never leave anything alone so I revised his recipe to make this Creamy Pumpkin Curry. The whole family loved this savory fall soup and I hope your family does as well!

Ok, Fine – A REAL Enchilada Recipe!!

I was laughing when I posted Jason’s last article The Whole Enchilada because I KNEW that there were going to be some folks who thought – AWESOME – a paleo enchilada recipe; only to find out that alas, no food in this post but some very powerful words of wisdom from Jason instead.  Just as important, but not quite as tasty.  I thought I would make it up to all of you by posting an actual enchilada recipe straight from my book, Everyday Paleo.

Alldrin & Sons Alaska Salmon

There’s nothing quite like fresh wild caught Alaska salmon; but how the heck is a California girl supposed to get her hands on such a find? Easter Menu: Smoked Salmon Casserole, Easter Bunny Carrots, Egg Cradles, & Tropical Macaroons

Easter is fast approaching and yet somehow the holiday feels incredibly late this year! The following recipes are brunch recipes but if you plan on making a big Easter dinner, I recommend either my Pot Roast or Rib Eye recipe.  I had so much fun preparing this meal!  I made most of it last night and we have been eating the leftovers all day today. My first two macaroon attempts were complete failures but this afternoon the boys and I pulled it together and came up with a macaroon we all were happy with.  Before I share my recipes I’ll share with you our typical approach to Easter, sans the “traditional” candy stuffed plastic eggs and over-sized chocolate bunnies.  Continue reading
