Cooking Demo – Name That Recipe!! (Ground Lamb and Pumpkin)

In this demo I made ground lamb and pressure cooked pumpkin.  I could not come up with a name for this dish so if any of you have suggestions, post your recipe name ideas to comments and I’ll let my boys pick the winner!

Ground Lamb and Pumpkin

1 lb ground lamb

1 zucchini, diced

1/2 red onion, diced

2 tbsp fresh parsley, minced

1 tbsp fresh mint, minced

3 cloves garlic, crushed

1 tbsp coconut oil

1/2 tsp sea salt

1 tsp paprika

1 tsp ground cumin

1/2 tsp allspice

Black pepper to taste

Heat oil in a large skillet, add onion and garlic and saute for 1 minute.  Add lamb and cook until the lamb is almost done.  Add the remaining ingredients, mix well, cover and let simmer together for 2 minutes or until the zucchini is tender but not mushy.

For the pumpkin, use 1 small sugar pumpkin.  Cut the pumpkin in 1/2 and remove the seeds (save them to roast)! Place the pumpkin in your pressure cooker with about 2 cups of water and cook for 6-7 minutes.

Scoop out the pumpkin and serve with a sprinkle of cinnamon with the lamb.

    What a lucky day for me! I just picked up a pumpkin at Trader Joe’s this morning and ordered a pound of lamb from my farmer with no idea of what I was going to do with either one. This is perfect! I will give it a try this week for lunch.

    or you could put the lamb mixture as a “stuffing” into the half of pumpkin and call it Lamb stuffed eezy peezy pumkin. Yumm-O I can’t wait to try this.

    I often look at your site for some great meal ideas and thought I would share a recipe I came across while making dinner tonight. I was looking for some thing different to do with butternut squash and found a recipe by Paula Dean that hopefully will turn out great. I am slowing trying to convince my parents and rest of the family to get more paleo by showing how tasted it can be, Not that they eat bad, compared to most Americans they are very healthy. But I can see the advances in myself and really just want to share it with everyone I come across. Anyway here the recipe I am a beginner at the paleo life by this looked good to me.
