Grill Those Peaches While You Can!

Peaches are at the peak of their season right now in Chico, CA and a week ago we came home with a big bag of very ripe peaches and nectarines from our farmer’s market.  John was grilling up some chicken and decided to throw on the peaches and nectarines for a simple, and by all means; out of this world delicious dessert.

Here is what he did:

1) Slice peaches or nectarines in half and remove the pit.

2) Sprinkle each cut side with either cinnamon or pumpkin pie spice.

3) Grill over medium heat with cut side down for approximately 3-5 minutes.

4) Serve with a scoop of whipped coconut cream on top.  (Scoop the cream out of the top of a can of chilled coconut milk – add about a teaspoon of vanilla extract and whip together with a hand held mixer)

5) Add a sprinkle of sliced almonds if desired.

    For those who include such things in their diet, I also recommend grilled peaches/nectarines with ricotta cheese and a balsamic vinegar reduction.

    That is so funny! I just gave that exact whipped coconut recipe to nicki last week!! Yum!!
    Sometimes after I whip it, I put it in the fridge for about 3-4 hrs. It thickens it up and makes it perfect for dipping! All fruits (raspberries, yummy!) and even dark chocolate (sssh! I’m a cheater!)
    I use it for my paleo piña colada dessert and also put it in my coffee!!

      YUM – love all those ideas. My kids LOVE dipping fruit into the whipped coconut cream. Hope you’re doing well Aimee – I need to come and visit!! : )

        That’s exactly why I started making it! So Jade could dip her fruit… and I added the vanilla because she loves my [non paleo] homemade whipped cream, and I wanted an alternative for her. Great mom-minds think alike!

        There are so many different ways to make it… but the easiest is to use a whole pineapple (I like it so ripe it is juicy) and when you cut it, cut it in to little bowls from the top down, fill it with a scoop of the thickened whipped coconut cream… toast some coconut shavings and sprinkle on top. It’s so yummy and tastes JUST like a pina colada.

    Whipped COCONUT cream? Brilliant. I love grilled peaches but it’s been too hot for most of the summer to think about standing over a grill! I’ll definitely be trying this now that September’s almost here. Yours are gorgeous!

    We have played around with the whipped coconut cream a lot! I like the Thai Kitchen brand of coconut milk as it has the most cream and tastes awesome. After whipping it with the vanilla, you can add other things like crushed strawberries, or even melted/cooled dark chocolate (or the Enjoy Life dairy-free, gluten free chocolate chips) and it takes on a mousse-like texture after several hours in the fridge. I haven’t made it plain and used it for a dip, but now that I have read that I will plan on doing it for my little Paleo granddaughter!

    heehee.. my cousin married a guy named John out in Chico,Ca ! small world !
    On the peaches, idk if i could do a grilled peach. i love raw fruits.
