I am thankful for All Of You! Thank you so much for taking the time to read my little blog. Everyday Paleo is a labor of love and I am humbled and honored to share my recipes and ideas that hopefully help make your life a bit more manageable.
I am thankful for the folks who have given me the resources to figure out how to live a healthy paleo lifestyle. Without these people, and you know who you are, I would still be wondering what to do with my life, and I would still be unhealthy!
I am thankful for my children. No one else in the world can make me as crazy, happy, and proud than my three boys. Coby, Jaden and Rowan, you make my life bright and filled with an infinite amount of joy.
I am thankful for my husband. Since I have known John he has never once doubted me and he has always been my biggest fan. John radiates love, he can always make me laugh, and John treats everyone he meets with a sort of gentle kindness that only comes from a person of true heart and integrity. To make sure all this mushy stuff doesn’t embarrass him too much, I’ll also clarify that John is a total bad ass athlete, strong as an ox, and amazing to watch whether he’s playing a game of softball or throwing around some serious weight in the gym.
I cannot begin to list ALL that I am thankful for in fear that you would stop reading, but my family, dear friends, and loved ones, you are all at the very top of my list.
My wish for all of YOU this week is simple. May you use your knowledge about health and wellness by making choices that are best for you and your family. Feel good about those choices, whatever they may be! Make a decision to enjoy yourself and enjoy the week rather then letting the week get away from you. Do not fall into that awful place of feeling deprived but be PREPARED and bake an Everyday Paleo Pumpkin Pie to bring with you to grandmas so you can have a treat. Or, make this awesome cookie recipe by my amazing friend Laura. John claims that these are the BEST paleo cookies he has ever eaten, and I would have to agree! Laura, we are eternally grateful for you and the joy you bring to our lives, and to top it all off, your cookies are out of this world!

Laura’s Amazing Cookies!!
1 cup of almond meal
1/2 cup finely chopped walnuts
1/2 tsp baking powder
1 tablespoon cinnamon
1 cup of cooked and mashed yam, pumpkin, or butternut squash
¼ cup coconut milk
2-4 tablespoons maple syrup
Preheat oven to 400. In a mixing bowl, stir together all the dry ingredients. In another small mixing bowl whisk together the egg, coconut milk, and maple syrup. Add the wet ingredients to the dry ingredients and mix well. Add the mashed yam, pumpkin, or squash to the dough and mix well. Grease a baking sheet with coconut oil or organic grass fed butter and scoop about one heaping tablespoon per cookie onto the baking sheet and bake for 20 minutes. Makes approximately 15 cookies.
