Most of you know Chrissy Gower of Growing up Paleo as my partner in crime and co-host of our podcast Paleo Talk (along with Dain of course!!) Chrissy has also been up to a few other things this past year, like having another little precious baby named Rylee Rae and writing a cookbook called Paleo Slow Cooking! I was lucky enough to receive an advanced copy of her book and I’m so excited to tell all of you about this “must have” addition to your expanding paleo library!
In Chrissy’s new book, she tells us her story and how she came to write a Paleo slow cooking cookbook! There’s a wonderful section included, written by Robb Wolf, in which he describes why it’s essential to cook and why slow cooking is such a great way to prepare food! Chrissy jumps back in to explain what type of slow cooker she recommends, how to use the darn thing, and she has a great list of the best meats and veggies to cook in a slow cooker, offers a section on how to chop, dice, slice, and shred, and the book also includes a handy reference guide of tools needed in the kitchen in order to prepare her recipes.
Speaking of recipes, there are over 80 of them and they are broken into sections: Breakfast, Soups & Stews, Main Dishes, Side Dishes, and Desserts. I was lucky enough to be one of the official “taste testers” during the creation of this book and there were several nights when Chrissy would bring over tons of leftovers for the Fragoso clan! My family was sad when the cookbook was finished and Chrissy stopped feeding us, but now I at least have her book to make the tasty recipes myself!
One recipe we did not sample while Chrissy was in creative mode was the Butternut Squash Lasagna, and when I saw this recipe, it was so intriguing that I had to try it. Lasagna in the slow cooker, and with butternut squash?? Really?? Well, it was awesome! What I loved most about this dish, besides that it was savory, comforting, and delicious, was the fact that it made plenty of food for my ravenous family of five and we even had leftovers for the next day; which is exactly what the slow cooker is all about! Easy prep and plenty of food so that you can go on about your busy life and not spend half of it cooped up in the kitchen!!
