Pan Seared Halibut with Ginger Mango Salsa and Cilantro Sauce

Yes, it’s a big name but way easier than it sounds and holy cow; so darn delicious I’m making this dish twice in one week!!!  I made this for lunch yesterday and although I haven’t yet tried the following option; I’m confident that the Salsa and the Cilantro Sauce would also be just as good over other seafood options besides halibut or served on top of chicken!

As summer approaches, I find my taste buds longing for light and fresh meals versus the heartier stews and roasted meats that sustained us through winter.

Pan Seared Halibut with Ginger Mango Salsa and Cilantro Sauce

Ginger Mango Salsa

1 mango, peeled and diced

½ small red onion, finely chopped

1 teaspoon fresh grated ginger

2 garlic cloves, minced

½ red bell pepper, finely chopped

Juice from ½ a lime

1/2 a bunch of cilantro, diced

In a medium sized mixing bowl, mix together the above ingredients and set aside.

Cilantro Sauce

½ cup home made mayo

½ cup cilantro

1 teaspoon cumin

2 teaspoons lime juice

Hot sauce to taste (I used Tapatio)

In a food processor or blender add all of the above ingredients and blend together until smooth.

The Fish 

1 pound halibut (Or however much you want to make!  One pound served two adults.)

2 tablespoons of coconut oil

Sea salt and black pepper to taste

1. Season both sides of the fish filets with salt and pepper.

2. Heat the coconut oil in a large pan over medium to medium high heat.

3. Once the oil in the pan is nice and hot, place the fish filets in the hot coconut oil in and cook for 3-4 minutes per side

4. Serve the fish topped with the Mango Ginger Salsa and drizzled with the Cilantro Sauce.

    This sounds super yummy! I love halibut and literally catch and eat over a hundred pounds a year, but we always stick to the same recipes. I’ll be adding this to my list of halibut recipes now. :)

    Made this last night and it was AWESOME! I added tarragon to the homemade mayo which added even more complexity to the flavor. Love the use of raw veggies in the salsa to really maximize available nutrients. Delicious and easy to make.

    I just made this last night and it was delicious! We had a lot of sauce and mango salsa left, so today for lunch I put some vinegar in the sauce to thin it and used it as a salad dressing. I put the mango salsa on my spinach salad with some slivered almonds, sliced strawberries and turkey and poured the cilantro “dressing” over it. I was GREAT! I even have enough for tomorrow!

    This was amazing! The next day I mixed some of the salsa and mayo in to a can of salmon and fried up these amazing fritters in olive oil. Topped them off with more salsa and mayo for a perfect lunch. Yum!!!

    Whole Foods had halibut on sale yesterday, so I made this last night for dinner. It was delicious. if you get the sear just right on the fish, this tastes better than eating out at a good restaurant. :)

    AMAZING! I looked this recipe up because I was missing Belize….. it is even better than the dish I was served there. I used Marie Sharps habenaro sauce in the mayo and now I want to put it on everything! Great idea.
