Yesterday being Valentines Day was if anything a great excuse to make dessert! Inspired by Andy Deas‘ coconut milk apple pudding, we decided to make a chocolate version. It was so sinfully easy that I can hardly call it a recipe but if you are looking for a special occasion dessert that is still somewhat paleo (minus the sugar in the chocolate of course) and tastes like you slaved away for hours; I highly recommend our Chocolate Custard! My mom used to make Chicken Divan when company came over for dinner. It seemed very gourmet at the time because for us it was so different. My mom was a total “health nut” and our normal meals usually consisted of veggie stir fries, big pots of beans or split pea soup and home made whole wheat bread. However; when we had guests she would bust out her Divan with big chunks of chicken and broccoli smothered with a mixture of cream of mushroom soup, mayo, and a touch of curry powder – and of course topped with slabs of melted cheese. Thai Curry is one of our favorite “go to” dishes and so easy to make I almost feel like I missed something after the meal is ready! You can put whatever you want to into this curry but I’ll give you the recipe for what we used the other night and it was a winning combo!

I love the seasonal fruits and veggies of summer. This time of year in Chico you’ll find a fresh fruit stand on almost every corner. On my way home from the gym yesterday I pulled off the road to one of the stands and picked up an abundance of strawberries, blackberries, and cherries. Coconut milk should be a staple in the paleo kitchen. Coconut milk is a good fat, and tastes delicious as a base for just about anything! I made lunch yesterday in about five minutes: Pour 1 can of coconut milk into a pot, add a couple handfuls of shrimp, shredded cabbage, and broccoli. I seasoned the whole pot with a 21 seasoning blend from Traders but you can use any combination of spices to make this dish different every time and also any kind of protein can be used as well. I simmered it all together for about 5 minutes and for Rowan, I served it over sweet potatoes. I had enough leftover for a after school snack for Jaden. Our coconut adventures continued into the evening when later on at Raley’s, Jaden saw coconuts in the veggie isle and asked if we could try “real” coconut milk! There is a photo collection below of our adventures. I’ll say this, I think you have to be a CrossFitter to get into an actual coconut!! The kids helped me make dinner – lettuce tacos. So easy. Cook ground (preferably grassfed beef) add cumin, chili powder, a little cayenne, sea salt and pepper. Cut up a ton of veggies – we use radishes, purple cabbage, green onions, avocado, olives and tomatoes. Wrap in lettuce leaves and enjoy!
