One big lesson is accepting that in order to eat paleo, you simply have to cook.  Another big realization: Even when it feels as if there is no time left in the day, the reality is that a delicious and healthy paleo meal can be only minutes away. <span id="more-407"></span> I used to justify ordering pizza or dragging the kids out to dinner because I work hard all day, so why would I want to make dinner?  Eating paleo has helped me come to appreciate the time I spend in the kitchen because I spend more time with my family, and the end result is the best reward.  There is nothing like sitting down together at the dinner table to bring us all together, and it&#8217;s truly worth the effort.  Another big lesson: When I am in a huge hurry or feeling burnt out, I ask for help.  Even little kids can pitch in and when I have one or all of my kids in the kitchen helping out, the task of cooking for the family turns into fun, and I get the help I need!</p><p>This is one of our &#8220;fast fix&#8221; favorites that was invented by one of the most unlikely cooks I know, <a href="http://www.norcalsc.com" target="_blank">Andy D. of Norcal</a>.
