This week in my CSA box from the farm co-op I belong to I received a TON (well about 2 lbs actually) of collard greens. I also happened to have a giant ham hock in my freezer – the last remaining piece of the recent 1/2 a hog that we purchased from our favorite local pig farmers. I have been wondering what the heck to do with the ham hock, and now that I had a bountiful amount of collards – I was suddenly inspired – Southern Style Collard Greens! Apparently my kitchen gets so hot that my coconut oil gets, “liquid-y”….
Along with having a lot of fun with our cooking demos, I am also inventing new words, and if anything, giving my family yet another reason to laugh at me!!
I have had a few people comment about breakfast options that do not include eggs. I know some folks never get tired of eating eggs, I being one, but I do think it’s important to have a lot of variety in our paleo diets. I have an on going nightly discussion with my 15 year old that goes something like this. “Hey mom, what’s for dinner?” Me, “I don’t know, probably meat and veggies?” My 15 year old, “Duh, I’m not sure why I even ask?” And then we both laugh.
Eating paleo is just that, meat and veggies, not too complex when it comes right down to it, and the good news is – boring is not a part of this lifestyle. [Read more…]
I am feeling optimistic, I feel as if People Are Listening!! I can go into Raley’s, Trader Joe’s, and now Costco and find various offerings of grass fed beef, free range bison, and free range organic chicken! I no longer feel like an underground cult member, looking and longing for my next fix of beef that won’t kill me. We, Us, the Consumer, have spoken and we are being heard, so keep it up folks!!!
