Thanksgiving Dinner - Paleo Style!!

My family all pitched in yesterday and we created an amazing holiday feast.  We ate a lot, laughed a lot, and stayed up way too late on a school night; but it was well worth it. We even managed to throw together a cooking demo for my Everyday Paleo Pumpkin Pie which we all had way too much fun filming, probably because of how blurry eyed and tired we were at that point!  As far as the meal was concerned, I personally am proud of how the stuffing turned out, and I am now forever in love with Prosciutto Wrapped Pears…  Jaden’s favorite was the Broccoli Casserole, and Rowan ate a pound of turkey before it even made it to his plate! Chicken Chili Soup

I must say, this soup was a huge success!  So good in fact that the leftovers I imagined enjoying today were gone in a flash as I watched the last bits of soup being scraped from the bottom of the pot.  I’m not sure what the heck I’m going to do as my boys continue to grow, and eat, and eat, and grow and holy cow – it’s crazy how much food these creatures consume!  If I had a dollar for every time I heard the words, “I’m hungry” well – you get the picture.  So, the moral of the story is, if you have as many hungry mouths to feed as I do, or if you make this over the weekend and want plenty of leftovers to get you through another busy week, double this recipe!!

Southern Style Collard Greens

This week in my CSA box from the farm co-op I belong to I received a TON (well about 2 lbs actually) of collard greens.  I also happened to have a giant ham hock in my freezer – the last remaining piece of the recent 1/2 a hog that we purchased from our favorite local pig farmers.  I have been wondering what the heck to do with the ham hock, and now that I had a bountiful amount of collards – I was suddenly inspired – Southern Style Collard Greens!  This is a dish I remember having as a child when we took a trip in a rented motor home and traveled from CA to New York, stopping at various states across the way. More School Lunch Ideas and a Couple of Cool Cave Girls
