My Holiday Ramblings and Our Christmas Menu

Wow, I can’t believe it’s almost here.  Christmas again.  I really do love the holidays but  I always find myself feeling nostalgic and a bit emotional as we head towards the 25th of December.  I miss the simplicity of how it used to be when I was little; when my mom was still with us and the innocence of not knowing that someday we would have to face Christmas without her. I miss when my grandma’s house in Huntington Beach, CA would be our warm winter escape from our old and drafty farmhouse in cold Northern California.  I miss the wonderful feeling of when the two week break from school would seem to last forever. “Spaghetti” in Creamy Tomato Sauce

We had such an awesome time this weekend spending time with my sister and her family, hanging out in San Francisco, and playing, relaxing and just being.  It was such a needed weekend of rest and we all came home rejuvenated and revived.  John and I headed straight for the gym when we got home for a much needed workout and when we got home the entire family pitched in and made our Memorial Day dinner.   [Read more…]

Meat n’ Veggies

I have an on going nightly discussion with my 15 year old that goes something like this. “Hey mom, what’s for dinner?”  Me, “I don’t know, probably meat and veggies?”  My 15 year old, “Duh, I’m not sure why I even ask?”  And then we both laugh.

Eating paleo is just that, meat and veggies, not too complex when it comes right down to it, and the good news is – boring is not a part of this lifestyle. [Read more…]

Ratatouille!!

Yes, this meal was Disney inspired…  Ratatouille was playing on TV a few weeks ago and my 6 year old asked me if WE could ever make Ratatouille.

Now to get off track a bit, I must mention that I recently signed up with a local farmers cooperative here in Chico called GRUB. Every Wednesday we go to the GRUB farm and for only $75 a month we get a weekly hook up of an amazing assortment of organically grown fresh vegetables.  It’s a great experience for the kids. Everyday Paleo Pizza

Paleo Pizza

Last year a trainer friend of mine at Norcal turned me on to paleo pizza made with almond meal crust.  Although I like this pizza and the crust works, I wanted to find a way to make the crust DELICIOUS, rather than just a vessel for the pizza toppings.  With a few tweaks to the original, I came up with this pizza crust recipe that I love so much that I am excited to make it again and use it for more than just pizza.

Ginger Shrimp Salad and Curried Hash

If you haven’t noticed, I LOVE to cook  – but sometimes I get stuck in the same old chicken salad rut because it’s easy, and I know we all like it.  But today I needed an excuse to be in the kitchen, rather then venturing out into the 105 degree weather so the boys and I  got a bit creative in the kitchen and the results were blog worthy!!
