What does eating Paleo REALLY Mean?? And a recipe

First, I would like to announce the winner of the Name That Recipe contest for last weeks Lamb and Pumpkin Recipe.  I let my 15 year old, Coby, pick the winner and after much deliberation and deep, deep thought – he decided on: Halloween Hash by Stefanie. Shrimp Flying Saucers…

Yes, name is a bit corny, but I swear the tomatoes in Northern California are so freaking huge right now they remind me of flying saucers after I slice them!!  So, hence the name.  I made this for lunch the other day and Rowan (the 2 year old) ate about half of it, no joke.  Actually, as I type this, I wish I had some more – it was so good!!
